WORLD FAMOUS VEGAN CHILI RECIPE

  • 1 cup chopped onions

  • 1 cup bell peppers / 1 cup red bell peppers (I used 2 bags of pre-cut frozen bell/onion)

  • 2 garlic cloves (minced)

  • 1 cup Morningstar Farms chorizo crumbles

  • 1 cup Morningstar Farms griller crumbles

  • 42.05 Ounces of diced and/or stewed tomatoes (combined here – 28 + 14.05 cans)

  • 1 can of black beans

  • 1 can of great northern

  • 1 can kidney beans

  • 1 can of pinto beans (not added here but recommended)

  • 3 tbsp. chili powder

  • 2 tbsp. tomato paste

  • ¼ cup frozen roasted corn (Trader Joe’s brand)

  • 2 tbsp. brown sugar

  • 1 tbsp. Goya APS

  • 1 tbsp. cumin

  • 1 tsp pepper

  • 1 tsp cinnamon

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • ½ tbsp. liquid aminos or salt (to taste)

  • Red pepper chili flakes to taste (or 1/8 tsp cayenne pepper)

Cook 4 hours on high in crock pot or cook on low overnight. Serve it up -- add plant based cheese and plant-based sour cream and green onions Enjoy!
